Role of the Public Health Veterinarian with USDA Food Safety and Inspection Service
Student will shadow Pulic Health Veterinarians (PHV) performing their day to day duties. Which include but not limited to Ante-mortem/Post-mortem/dispositions of suspect carcasses, Export Verifications, Field screening for residues, Humane handling, Federal Meat Inspection Act, verification of regulatory requirements in establishments under one or more Hazard Analysis and Critical Control (HACCP) Plans, and other consumer protections. Student will spend time with the PHV's at a large high speed cattle kill, a sow slaughter plant, and ritual slaughter facilities.
Student will have no decision making responsibilites for the USDA FSIS. Students role is to shadow a variety of PHV's at a variety of slaughter operations. Student is expected to be professional, ask questions, and learn as much as possible.
Eight hours per day/40 hours per week for two weeks
