The student will learn about the role of veterinarians in the area of food safety as it relates to meat and poultry products. The intern will shadow agency veterinarians as they do their daily activities. The student will learn first hand the activities of the regulatory program in accomplishing their mission of assuring meat and poultry products are safe, wholesome and truthfully labeled.
The student will spend time shadowing one or more agency veterinarians, who are specially trained in the area of food safety. The veterinarians are trained to be critical thinkers when doing comprehensive food safety assessments of a meat and poultry establishment's operating plans.
A wide variety of training materials are available and will be used during the student's experience. Many reference documents will also be made available.
The students are expected to dress professionally, be prompt and be open to learning more about the meat and poultry industries and their responsibilities to comply with the statutes and regulations.
The student will be assigned to accompany a veterinarian as he/she provides supervision of the meat and poultry food safety program. The student will have access to a veterinarian nearly at all times during the internship experience.
No housing is available. The majority of time will be spent in close proximity to Central Ohio. Students will need to provide their own transportation or will be authorized in a vehicle owned by the State of Ohio.
